My husband's parents owned the first and only kosher chicken shop in Sydney, and he became a chicken expert (in cooking and eating). He had only looked at your dinner and decided to fly to London to share it with you :) But he asks you can you add tomato and wine on top, then cover it with alfoil to stop the thick liquid from evaporating.
The meal reminds me of Rukmini Iyer's cookery book - The Quick Roasting Tin. Good recipes but needs a second plate of something like your rice. It looks delicious.
